The Formula Behind Glycemic Load
The glycemic load is calculated by multiplying the glycemic index of a food by the amount of available carbohydrate in a serving, then dividing by 100:
Available carbohydrate is total carbohydrate minus dietary fiber minus sugar alcohols. Fiber is not digested into glucose in the small intestine, and most sugar alcohols are only partially absorbed, so excluding them gives a more realistic estimate of glucose response.
